Recipe: Chicken Pilau

Description: Chicken with Rice.
Total time to cook    1   hours ,   30   minutes
Ingredients
1 cup Water
1 Bay Leaf
2 sprigs Parsley
4 tablespoons Butter
2 cups Uncooked Rice
1 teaspoon Curry Powder
1 4 lb RoAsting Chicken
1 teaspoon Salt
1 pod Red Pepper
2 sprigs Thyme
1 Chopped Onion
1 clove Garlic
Directions: Place first seven ingredients together in roasting pan. Place dressed chicken on top and pour water mixed with currey powder on top. Place in 350 degree oven, adding water as needed and basting occasionally to prevent chicken from drying. After 1/2 hour (or chicken has cooked), drain off chicken broth (and save) and replace with 2 cups of water. Continue cooking for 1/2 hour. Drain again and return chicken to brown. Wash the rice, add the chcken broth and enough water to make a total of 4 cups, then slow cook for 20 minutes. Set aside in a warm place to fluff and dry. When chicken is browned, remove from the oven. Add butter to rice and mix well. Spread rice over bottom of roasting pan. Place chicken on top of rice, cover and continue cooking for thirty minutes, or when a crust has formed on the bottom of the rice. To serve: Place chicken on Plate and cover with rice.
