Found in my my grandmother's old recipe box. I like this one because my daughteronly eats apple sauce. This was on the inside label saved from a can of apple sauce, circa 1940.
You can substitute grated lemon rind for vanilla. |

Ingredients

eggs, separated | | 3/4 cup
apple sauce | | 1/2 teaspoon
vanilla | | 1/2 dash
salt | | 6 tablespoons
sugar | | 1 cup
milk | | 2 teaspoons
jelly |

| Directions: |
Mix the slightly beaten egg yolks, 2 tablespoons sugar and a few grains of salt. Stir in milk. Cook over boiling water about 3 minutes,or until mixture is slightly thickened. Allow to cool.
Fold in vanilla and apple sauce.
Put into 4 individual desert dishes.
Cover and chill.
When ready to serve, beat egg whites until stiff. Gradually beat in remaining 4 tablespoons of sugar.
Drop meingue on top of custard. Garnish with jelly. |
