Recipe: Smoked Salmon

Description: First you need a smoker. This is a recipe for Alaskan Smoked Salmon. The serving size is determined by the amount of salmon being smoked.
Total time to cook    10-15   hours
Ingredients
4 cups dark brown sugar
1 cup non-iodized salt (canning & pickling or kosher salt)
10-15 cloves of garlic
Directions: In a bowl mix all above ingredients together. Generously rub into raw salmon then place the salmon into a container so the salmon can marinate for about six to eight hours. The container will fill up with liquids from the salmon due to the salt pulling the water from it (this is good). After it is done marinating place the salmon on a cooling rack so that it can dry. Once it is mostly dry you are ready to start the smoking. The temperature should be around 180-200 degrees. This process will take some time (6-8 hours). Have a beer or a beverage of your choice. You will start to notice the salmon drying up with the thinner ends rolling up. Once the salmon is dried it is ready to eat.
