Recipe: Buttermilk Spice Muffins

Description: Wonderfully delicious spice muffin... great with a cup of hot tea or coffee.
Total time to cook   25   minutes
Ingredients
1/2 cup Sugar
1 cup Sugar
NUT MIX
1/2 cup Butter or Margarine
3 Eggs
2 1/2 cups Flour
2 tsps Baking Soda
1 tsp Nutmeg
1/2 tsp Cinnamon
3/4 cup & 1Tbsp Buttermilk
MUFFIN MIX
1 cup Walnuts, finely chopped
1/2 tsp Nutmeg
Directions:

Grease baking tin with butter or margarine.

 

Preheat the oven to 375 degrees. In a mixing bowl cream the sugar and butter together with an electric mixer. When they are thoroughly mixed, add eggs and beat an additional minute.

 

In a separate bowl, sift together the flour, baking soda, cinnamon and nutmeg.

 

Add the flour mixture along with the buttermilk to the sugar and butter mixture, mix at slow speed until smooth. To avoid lumps in the batter, add the wet and dry ingredients alternately, in small amounts.

 

Make the nut topping: mix all ingredients together in a small bowl.

 

Fill each cup ¾ full of batter. Add a full, rounded tablespoon of nut topping on top of each muffin cup of batter. Bake immediately or the topping with sink to the bottom of the muffin tin.

 

Bake at 375 degrees for 20-25 minutes, until golden brown. A toothpick inserted in the middle of the muffin should come out dry when they are done.

Ending notes:

Recipe makes 12 standard size muffins or 6 jumbo muffins. If using jumbo muffin tin, reduce the oven temperature by 25 degrees and increase the baking time by 5-10 minutes.
